SPAM® Brand Fried Rice

This may be the easiest and most satisfying fried rice recipe you'll encounter. The secret is using day-old rice, not rice that's been freshly cooked, to achieve that granular, toothsome texture. This recipe is flexible enough for your variations—feel free to add in additional vegetables, proteins, or even a few squirts of chili paste.

  • 3 cups day-old fried rice
  • 1/2 can of SPAM® Brand, diced
  • 2 eggs, scrambled
  • 3 scallion stalks
  • 2 Tbsp. soy sauce
  • 2 tsp. sesame oil
  • Cube SPAM® Brand into 1/4-inch pieces, fry in wok (or large frying pan) until crispy. Add a tablespoon of vegetable oil into wok and dump in cooked rice; stir-fry for 3-4 minutes. Partition an area of the wok to cook the scrambled eggs. When eggs begin to get fluffy, combine with fried rice. Add soy sauce, sesame oil, and finally, chopped scallions.
