In this season of A.V. Cocktail Club, Chicago bartender Laura Kelton offers tips on making classic cocktails. The key to an ideal pineapple daiquiri, Kelton says, is to source the freshest, highest-quality pineapple juice you can get your hands on. If you can juice the fruit yourself at home, even better.
Pineapple Daiquiri
2 oz. white rum
0.75 oz. lime juice
0.75 oz. simple syrup (1:1 sugar-to-water)
0.75 oz. fresh pineapple juice
Add ingredients to shaker tin. Add ice and shake vigorously. Strain into coupe glass, then add a lime wheel to garnish.

Hey, a simple, classy, summer recipe for a cocktail. This is one I can actually make without trying to source some strange liquor I've never heard of, and would only use for one cocktail. It also gives me an excuse to pull out that juicer I got for Christmas like 5 years ago and never used, and has infinite variations, I'm thinking maybe juicing a mango or a peach instead of the simple syrup.
