Classic 3-Cheese Mac And Cheese Recipe

Ingredients
  • 1 ½ cups elbow macaroni
  • 6 tablespoons unsalted butter, divided
  • 2 tablespoons grated onion
  • ¼ cup all-purpose flour
  • 1 ¾ cups milk
  • ¾ teaspoon salt, plus more for the pasta water
  • 1 pinch cayenne pepper
  • 1 cup shredded Gouda cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Colby cheese
  • ¾ cup panko breadcrumbs
Directions
  1. Grease an 8x8-inch baking dish.
  2. Bring a large saucepan of salted water to a boil.
  3. Add the macaroni and cook according to package directions, using the shorter cooking time if given a range.
  4. Drain and set aside.
  5. Preheat the oven to 350 F.
  6. Meanwhile, melt 4 tablespoons butter in a large saucepan over medium heat.
  7. Add the grated onion and cook for 2 minutes, stirring occasionally.
  8. Add the flour and cook for an additional minute, stirring occasionally.
  9. Whisk in the milk, salt, and cayenne. Bring to a boil, then lower the heat to a simmer.
  10. Whisk in the shredded Gouda, cheddar, and Colby cheeses until smooth.
  11. Remove from the heat and stir in the cooked elbow macaroni.
  12. Transfer the mixture to the prepared baking dish.
  13. In a medium bowl, melt the remaining 2 tablespoons butter in the microwave. Stir in the panko breadcrumbs.
  14. Sprinkle the panko mixture on top of the macaroni mixture.
  15. Bake for 30 minutes.
  16. Serve while warm.
