Easy Copycat Panera Broccoli Cheddar Soup Recipe

Ingredients
  • 4 tablespoons butter
  • ½ small yellow onion, finely chopped
  • ¼ cup flour
  • ½ teaspoon paprika
  • 3 cups low sodium chicken broth
  • ½ teaspoon salt
  • 1 medium carrot, shredded
  • 3 cups broccoli florets, chopped into small, bite-sized pieces
  • 1 cup heavy cream
  • 4 ounces cheddar cheese, shredded
  • 4 ounces Velveeta, cubed
  • 1 teaspoon Dijon mustard
  • 2 dashes hot sauce
Directions
  1. Melt butter in a large saucepan over medium heat.
  2. Add the onion and cook until soft, about 3 to 4 minutes.
  3. Sprinkle in the flour and paprika and cook, stirring occasionally, for 1 minute.
  4. Whisk in the chicken stock and salt and bring to a simmer.
  5. Add the carrots and broccoli, and cook until soft, about 4 to 5 minutes.
  6. Stir in the cream, shredded cheddar, Velveeta, and Dijon. Heat until melted.
  7. Stir in 2 dashes of hot sauce (add more as desired). Ladle soup into bowls and serve while warm.
