Ingredients
  • 4 (6-ounce) salmon filets
  • 1 teaspoon salt, divided
  • ¼ teaspoon pepper
  • 16 ounces grape tomatoes
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • ¼ cup heavy cream
  • ½ teaspoon dried oregano
  • 2 tablespoons torn basil leaves
Directions
  1. Preheat the oven to 375 F.
  2. Place the salmon filets, skin-side down, in a large, oven-safe skillet or baking dish. Season with ¾ teaspoon salt and all of the pepper.
  3. Place the grape tomatoes and minced garlic in the baking dish, surrounding the salmon.
  4. Drizzle the salmon and tomatoes with the olive oil and sprinkle with the remaining ¼ teaspoon salt. Toss gently to combine.
  5. Bake for 20–23 minutes, or until the salmon flakes easily with a fork.
  6. Remove the salmon from the dish and set aside.
  7. Stir the heavy cream, dried oregano, and torn basil leaves into the tomatoes, mashing the tomatoes slightly until they release their juice.
  8. Serve the salmon, topped with the burst tomatoes, while still warm.
